
Classic Banana Bread
The loaf that uses up your sad brown bananas — moist, sweet, gently spiced, and brilliant toasted with butter for days afterwards.
Ingredients
- 3 ripe bananas · 354 g · 315 kcal
- mashed
- 200 g plain flour · 200 g · 728 kcal
- 100 g brown sugar · 100 g · 380 kcal
- 2 eggs · 100 g · 143 kcal
- 100 g butter · 100 g · 717 kcal

- 1 tsp baking powder · 4 g · 2 kcal

Method
- Heat the oven to 170C / 150C fan and line a 900 g loaf tin with baking paper.
- Cream the softened butter and brown sugar until pale, then beat in the eggs one at a time.
- Fold in the mashed bananas and vanilla.
- Sift in the flour, baking powder and cinnamon, and fold gently until no streaks of flour remain.
- Scrape into the tin, level the top and bake for 55-65 minutes until a skewer comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a rack to cool completely before slicing.
💡 Riper bananas = sweeter, more flavoursome loaf. Black-speckled skins are exactly what you want.
