  • 3 ripe bananas · 354 g · 315 kcal
  • mashed
  • 200 g plain flour · 200 g · 728 kcal
  • 100 g brown sugar · 100 g · 380 kcal
  • 2 eggs · 100 g · 143 kcal
  • 100 g butter · 100 g · 717 kcal
  • softened
  • 1 tsp baking powder · 4 g · 2 kcal
  • 1 tsp ground cinnamon · 2 g · 5 kcal
  • 1 tsp vanilla extract · 4 g · 12 kcal

Method

  1. Heat the oven to 170C / 150C fan and line a 900 g loaf tin with baking paper.
  2. Cream the softened butter and brown sugar until pale, then beat in the eggs one at a time.
  3. Fold in the mashed bananas and vanilla.
  4. Sift in the flour, baking powder and cinnamon, and fold gently until no streaks of flour remain.
  5. Scrape into the tin, level the top and bake for 55-65 minutes until a skewer comes out clean.
  6. Cool in the tin for 10 minutes, then turn out onto a rack to cool completely before slicing.
💡 Riper bananas = sweeter, more flavoursome loaf. Black-speckled skins are exactly what you want.
