  • 300 g dried pasta · 300 g · 1113 kcal

  • 600 ml whole milk · 600 g · 366 kcal
  • 200 g cheddar cheese · 200 g · 806 kcal

Method

  1. Cook the pasta in salted water for 2 minutes less than the packet says. Drain, reserving a cup of pasta water.
  2. Melt the butter in a pan over a medium heat, stir in the flour and cook for 1 minute, whisking.
  3. Gradually whisk in the milk and simmer for 3-4 minutes until thick enough to coat the back of a spoon.
  4. Take off the heat, stir in the cheddar, parmesan and mustard until melted and silky. Season.
  5. Fold in the pasta, loosening with pasta water if needed. Scatter the breadcrumbs on top and grill for 2-3 minutes until golden, or serve straight away.
💡 Grate your own cheddar — pre-grated bags are coated in starch and turn sauces grainy.
