Ingredients

  • 4 tomatoes · 492 g · 89 kcal
  • cut into wedges
  • 1 cucumber · 150 g · 22 kcal
  • thickly sliced
  • 1 red onion · 110 g · 44 kcal
  • thinly sliced
  • 200 g feta cheese · 200 g · 528 kcal
  • 80 g black olives · 80 g · 92 kcal
  • 3 tbsp olive oil · 40 g · 358 kcal
  • 1 tsp dried oregano · 1 g · 3 kcal
  • salt and black pepper

Method

  1. Combine the tomatoes, cucumber, red onion and olives in a wide serving bowl.
  2. Place the feta on top in one or two slabs — do not crumble it, this is a salad of big pieces.
  3. Drizzle over the olive oil, scatter with the oregano and season with black pepper and a little salt.
  4. Toss lightly at the table so the feta stays in chunks, and serve with crusty bread.
💡 Leave the salad to sit for 10 minutes before serving — the salt and oil pull the juices out of the tomatoes into a dressing.
