Method
- Combine the tomatoes, cucumber, red onion and olives in a wide serving bowl.
- Place the feta on top in one or two slabs — do not crumble it, this is a salad of big pieces.
- Drizzle over the olive oil, scatter with the oregano and season with black pepper and a little salt.
- Toss lightly at the table so the feta stays in chunks, and serve with crusty bread.
💡 Leave the salad to sit for 10 minutes before serving — the salt and oil pull the juices out of the tomatoes into a dressing.
