Method

  1. Heat the oil in a large pot and soften the onion, carrots and celery for 6-7 minutes.
  2. Add the garlic and oregano and cook for 1 minute, then pour in the tomatoes and stock. Season and simmer for 10 minutes.
  3. Add the dried pasta and green beans and cook for 8-10 minutes until the pasta is nearly done.
  4. Stir in the kidney beans and simmer for 3 more minutes so they warm through without breaking up.
  5. Taste, adjust the seasoning, and serve with a slick of olive oil and plenty of grated parmesan if you like.
💡 The soup thickens as it sits — add a splash of stock or water when you reheat leftovers.
