
Grandma-Style Minestrone
A vegetable-packed Italian soup with beans, pasta and tomato in herby broth. Rib-sticking, frugal and better on day two.

Method
- Heat the oil in a large pot and soften the onion, carrots and celery for 6-7 minutes.
- Add the garlic and oregano and cook for 1 minute, then pour in the tomatoes and stock. Season and simmer for 10 minutes.
- Add the dried pasta and green beans and cook for 8-10 minutes until the pasta is nearly done.
- Stir in the kidney beans and simmer for 3 more minutes so they warm through without breaking up.
- Taste, adjust the seasoning, and serve with a slick of olive oil and plenty of grated parmesan if you like.
