
Beef Chilli con Carne

Method
- Heat the oil in a large pot and brown the beef mince over a high heat until well coloured, then remove and set aside.
- In the same pot, soften the onion and pepper for 5 minutes, then add the garlic, chilli, cumin and paprika and cook for 1 minute until fragrant.
- Return the beef to the pot with the tomatoes and beef stock. Bring to a simmer.
- Cover and cook gently for 40 minutes, stirring occasionally.
- Stir in the kidney beans and simmer uncovered for 10 more minutes until the sauce is thick. Season and serve with rice, or in a bowl with tortilla chips.
