  • chopped

  • 240 g kidney beans · 240 g · 305 kcal

  • 200 ml beef stock

Method

  1. Heat the oil in a large pot and brown the beef mince over a high heat until well coloured, then remove and set aside.
  2. In the same pot, soften the onion and pepper for 5 minutes, then add the garlic, chilli, cumin and paprika and cook for 1 minute until fragrant.
  3. Return the beef to the pot with the tomatoes and beef stock. Bring to a simmer.
  4. Cover and cook gently for 40 minutes, stirring occasionally.
  5. Stir in the kidney beans and simmer uncovered for 10 more minutes until the sauce is thick. Season and serve with rice, or in a bowl with tortilla chips.
