Method

  1. Heat the oven to 180C / 160C fan and line two baking trays with paper.
  2. Beat the butter and both sugars until light and creamy, then beat in the eggs and vanilla.
  3. Fold in the flour, bicarbonate of soda and salt until just combined, then stir in the chocolate chips.
  4. Chill the dough for 20 minutes — it makes the cookies thicker and chewier.
  5. Roll tablespoons of dough into balls, space them well apart on the trays and bake for 10-12 minutes until the edges are golden but the centres look slightly underdone.
  6. Cool on the tray for 5 minutes (they firm up as they cool), then move to a rack.
💡 Underbake slightly: cookies that look soft in the middle when they come out are the chewy ones.
