
Chicken & Broccoli Stir-Fry
A proper 20-minute stir-fry: tender chicken, crisp broccoli and glossy soy-ginger sauce over rice. Faster than the takeaway, far cheaper.

Method
- Cook the rice according to the packet, or reheat leftover rice until steaming.
- Season the sliced chicken with a pinch of salt. Heat the vegetable oil in a wok over a high heat until shimmering.
- Stir-fry the chicken in batches for 3-4 minutes until golden and cooked through. Remove and set aside.
- Add the broccoli, pepper and carrots with a splash of water and stir-fry for 3 minutes until bright and just tender.
- Return the chicken with the garlic, ginger, soy sauce and sesame oil. Toss everything for 1-2 minutes until glossy and piping hot.
- Serve over the cooked rice.
💡 Cook in batches and keep the heat high — overcrowding the wok steams the chicken instead of browning it.
