  • 2 carrots · 122 g · 50 kcal

  • 2 celery stalks · 80 g · 13 kcal

  • 400 ml beef stock
  • 2 tbsp tomato paste · 22 g · 4 kcal

Method

  1. Toss the beef in the flour with plenty of seasoning. Heat the oil in a large casserole and brown the beef in batches until deeply coloured, then set aside.
  2. In the same pot, soften the onion, carrot and celery for 5 minutes, then add the garlic and tomato paste and cook for 1 minute.
  3. Return the beef with the stock, thyme and enough water to just cover. Bring to a simmer, cover and cook gently for 1 hour 45 minutes, stirring occasionally.
  4. Add the potatoes and simmer uncovered for 30 more minutes until the beef is meltingly tender and the gravy is thick. Season to taste.
  5. Serve in deep bowls with crusty bread or extra mash.
💡 Browning the beef properly — really dark, not just grey — is where most of the stew's flavour comes from.
