
Hearty Beef Stew
Slow-simmered chunks of beef in rich gravy with carrots, celery and fluffy mash-ready potatoes. One pot, low effort, deeply rewarding.

Method
- Toss the beef in the flour with plenty of seasoning. Heat the oil in a large casserole and brown the beef in batches until deeply coloured, then set aside.
- In the same pot, soften the onion, carrot and celery for 5 minutes, then add the garlic and tomato paste and cook for 1 minute.
- Return the beef with the stock, thyme and enough water to just cover. Bring to a simmer, cover and cook gently for 1 hour 45 minutes, stirring occasionally.
- Add the potatoes and simmer uncovered for 30 more minutes until the beef is meltingly tender and the gravy is thick. Season to taste.
- Serve in deep bowls with crusty bread or extra mash.
